Kale, Cucumber, Apple Juice

This is a refreshing drink even though it looks like fresh cut grass. I am amazed at how bright green it is even when a day or two old. 

When kale is out of season, it can be a little bitter.  If you find this happen, add a little more apple to make it more palatable. The juice is keeping in the refrigerator very well in a glass jar with an air tight lid. It is best to finish it up within 2 to 3 days.

Green Juice
2 bunches lacinato kale (dino kale)
1 cucumber
2 green apples

1 pear
spinach, couple handfuls

Put all ingredients through juicer. Pour into a glass and enjoy.

Health Benefits:
Kale is a cruciferous vegetable high in vitamin C, chlorophyll and soluble fiber and contains multiple nutrients with potent anti-cancer properties (diindolylmethane, sulforaphane and selenium). Cruciferous vegetables also help reduce homocysteine levels so they reduce the risk of cardiovascular disease.

Fresh apple juice carries a significant amount of vitamins A and C. Apple juice flushes out the kidneys and liver and is low in calories. Pear juice is one of the best cleansers of the urinary and gastrointestinal tracts and a great cure for constipation.

Cucumbers contain natural salts, enzymes, and vitamins essential for cell growth and repair. The high mineral content in the peel makes it a source for a fresh, powerful antioxidant. The alkalinity of cucumber is also a positive attribute, and because of its water base, the cucumber is also a top choice as a diuretic.

Juicing vegetables and fruits frees up their nutrients from the fiber which allows them to get into your system faster. There is hardly any digestive work needed to process raw, enzymatically active liquid. Juicing also helps to clean the liver, whose primary job is to clean the rest of our body. I find that fresh vegetable juice gives me energy and curbs my hunger for hours.

Right before reading this post, I made a kale, cucumber, and granny smith apple juice combo! It was great - the remaining ingredients counteracted the bitterness of kale.

Thanks for this. I love juicing kale and find that it blends very nicely with the young apples on my Fuji tree. Juicing cucumber is new to me but the juice is delicious in combination with other juices and apparently has a positive effect on blood pressure. A fried is turning 40 next week and I plan on making cucumber mint martinis for her party.

I love this combination and sometimes add a few celery stalks, half a lemon and/or lime, and a small amount of ginger. All these flavors mix together extremely well.

Thanks! This really is a tasty combination. I like the addition of the lemon and lime too David. I havent blogged about any juices in a long time because I am so frusterated with my old juicer. I just purchased a new Breville after watching "Fat, Sick, and Nearly Dead" which I will be blogging about soon!
