Garlicky Green Beans

This is by far the favorite vegetable dish in the house. I could make this almost every night and we would be fine with it. I want to try adding some chili pepper flakes next time for a little zing. This is the "fast and easy" method of cooking, using only one pan. They also come out great roasted in the oven (and look prettier too).

2 tsp olive oil
3 cloves garlic, minced
¼ cup Vegetable Stock
1 pound green beans, ends trimmed
1 tsp salt

Heat oil in medium frying pan over low heat. Add garlic and sauté until softened, about 1 or 2 minutes. Do not heat too long or garlic will brown and turn bitter. Pour garlic into serving dish, set aside.

Add stock to same frying pan over low heat. Add green beans and cover. Let simmer for 8 minutes, until beans are soft but not mushy. Place green beans in serving dish with garlic, add salt and then toss to coat. Makes 4 servings.
